I am using ultra thread 210 white on a few flies. It seems to start coming apart and breaking when wrapping. None of my other threads or colors are doing this. Bad technique? Bad bobbin? Bad thread?

Swap bobbins to check that out. But I have encountered the odd bad spool, and there's not much you can do about it except try another spool from another batch. (I wonder if the 'bleaching ' process to create white might have compromised the thread?) brent

would a ceramic tip help? i will try another bobbin in the meantime. i pulled the legs out to relieve some of the pressure but that didn't help.

I'd try it on another bobbin first. 210 denier thread is fairly thick and strong (by thread standards). It would take quite a bit of pressure to break your thread. Odds are something on that bobbin is causing abrasion and weakening the thread.
As for a ceramic bobbin...I know a lot of folks like them, but I've done just fine with normal metal bobbins. The three bobbins I use are the same three that were gifted to me 25+ years ago. They're still doing the job just fine.
