Making this for Mother Day dinner for my wife and the kids of course. I picked up some fresh Garlic, Oregano, Thyme and Basil and an eggplant. I've never made lasagna before so this is new for me. We are eating it tonight as I will be with my family tomorrow.
I made a sauce from diced tomatoes, tomato sauce fresh mushrooms and fresh garlic and the fresh herbs.
I'll shoe string the eggplant and chop up some fresh spinach and some more fresh basil, oregano and thyme....just a little bit and layer noodles, ingredients and Mozzarella cheese.
We'll see. Like I said, I have never made this before.
Think she will let me buy a new fly rod for Fathers Day if it turns out good?
